U.S. Pork Industry Announcement Accelerates Need for New Canadian Programming

The Vice President Technical Programs and Marketing Services with Canada Pork International says a recent U.S. pork industry announcement that it is moving forward with the development of a new quality based grading system for pork accelerates the need for the development of such as system in Canada.
Canada Pork International, in partnership with Swine Innovation Porc, has been working on a grading system for pork focused on meat quality attributes including meat color, intramuscular marbling and the firmness of the meat.
Michael Young, the Vice President Technical Programs and Marketing Services with Canada Pork International, says this type of system will allow processors to select different qualities of pork for different market applications, for instance leaner pork for processing, slightly more marbling for retail or heavily marbled pork for food service.

End user customers, for years have asked for this kind of a grading system however change is slow in the processing side.
What has changed recently, just last week USDA and the National Pork Board announced that they are discontinuing their old grading system, which was based on the same one that we have and they are pursuing a new quality grading system as well and it's based on color, marbling and texture which is quite innovative.
I have to take my hat off to them.
They are definitely going down the right path to provide a competitive advantage for their customers so they are definitely moving in that direction as well.
That underpins the significance of change in the market place and it certainly will point to a competiveness that will need to be addressed.

Young says the announcement of the new U.S. grading system for pork will provide a new measurement point that Canadian pork processors will need to compare to.
